A small dairy based in Killeshin, Co Laois is making a big splash when it comes to an alternative to mass produced milk and cream. The Village Dairy produce a variety of craft milk and cream, both organic and conventional, as well as goat’s milk and Jersey milk and cream. In fact, they are the only producers of pure Jersey milk & cream in the whole of Ireland. Noel Barcoe, who runs the family owned business, explains that even though they have only been trading less than a year they have already capitalised on a niche market, drawing particular attention from baristas.”They love the silky foam the milk produces reveals Noel. A lot of time and effort goes into achieving dairy products that would pass the baristas high standards. The Village Dairy collect raw milk from a variety of local farms including The Little Milk Company and bring it to their dairy to be processed. “We take great care to ensure all temperatures are correct, not to hot or cool, to pasteurize without affecting taste,” explains Kenny Hurley the dairy’s production manager. “We then separate taking just a little cream to ensure limits are maintained but keep the taste, and very carefully homogenize the milk before packing it and keeping it cool.” The milk is disturbed as little as possible during this process and absolutely nothing else is added. “It’s as natural and as fresh as it can be,” says Kenny.
