Organic Irish Mild Cheddar

Our top medal winner, though this semi hard cheddar is our “Mild” it packs a punch with taste. It has been matured for up to 6 months giving it a very distinctive strong taste with a full creamy flavour, making it a favourite of Little Milk Co fans. It is made in 18kg wheels which we can cut to our customer requirements, 135g pre packs are also available. Before enjoying Little Milk Co Mild Cheddar take out of the fridge for at least an hour- 11C degrees is the optimum temperature for enjoying its creamy texture and flavour! Pairing with wine? We recommend pairing with a full bodied & aromatic white or medium bodied red wine, try Chardonnay, Pinot Noir, Merlot, Sangiovese or Syrah. This is one of the first cheeses you should try when enjoying a Little Milk Company cheese board due to its milder flavour, or why not try melting on homemade burgers as used by many of our customers in their restaurants. This cheese is safe to eat when pregnant. This only contains vegetarian rennet and therefore is suitable for vegetarians!

Organic Irish Mature Cheddar

The Little Milk Co Mature Organic cheddar is made with raw unpasteurised organic milk, and matured for up to 12 months. Raw milk has not been exposed to the heat treatment required for full pasteurisation, raw milk cheeses retain more of the natural flavours and nutrients present in the milk used to make them, making it rich in antioxidants and Omega-3. Raw cheeses are generally more complex and have aromas that linger longer in the mouth, making them a cheese full of character giving this a creamy flavour, earthy tones, firm body and nutty aroma. Our Mature wheels are 2.5kg from which any size wedges can be cut to customers’ requirements, 135g pre packs are also available. To enjoy the full flavour of our Mature cheddar take it out of the fridge at least an hour prior and let it get to an ambient temperature of 11 degrees. On your Little Milk Company Cheese board this should be eaten after your milder cheddar and Brie but before the stronger vintages and rind washed Brewers. This cheese pairs well with a full bodied red or Port. This cheese is not safe to eat when pregnant. Its rind is made with animal rennet so also not suitable for vegetarians!

Organic Irish Vintage Cheddar

The Little Milk Co Vintage Cheddar is made from raw unpasteurised milk which has not been exposed to the heat treatment required for full pasteurisation and therefore retains more of the natural flavours and nutrients present in the milk used to make it. This is a complex cheese and has aromas which linger longer in the mouth. This cheese has been aged for up to 18 months, with less moisture than younger cheddars leaving a concentration of protein and fat. Its aging makes it a hard dry cheese which is full of character, but it really needs to left out of the fridge unwrapped for an hour to get to an ambient temperature of around 11 degrees -the taste difference is worth the wait! The dry crumbly texture of this cheese makes it perfect for grating as a parmesan alternative or cooking in dishes like Gratins. When enjoying on a Little Milk Company cheese board, the strong flavour of this cheese makes it great for eating towards the end! Cut in thin slices to let it melt in your mouth. Our Vintage wheels are 2.5kg from which any size wedge can cut to customer’s requirements, 120g pre packs are also available. Thinking about wine? This cheese pairs well with full bodied reds like Cabernet Sauvignon and Malbec, an Oak Smoked Chardonnay and great with Port or whiskey! Winner of the Gold medal at the Mondial du Fromage in France 2015. This cheese is not safe to eat when pregnant. Its rind is made with animal rennet so also not suitable for vegetarians.

Organic Irish Brie

Our creamy Brie is one of our most popular cheeses in The Little Milk Company family especially for restaurants! Because it’s made with our own 100% Irish Organic pasturised milk our Brie has a soft extra creamy centre and snow white penicillin rind. The pure nature of the milk adds some earthy notes to the rich, full flavour of this cheese. This is a soft cheese which changes during the cheese aging process, when the brie is young it is firm with a mild taste when more ripe it will be softer with a stronger flavour and finally when its fully mature it can get ‘runny’ and has a very strong flavour, so depending on how you like your cheese will depend on when you buy your cheese or how long you should leave before opening! Large Brie wheels are 1kg, while our cute Mini Brie are available in 150g pre packs. When enjoying on a Little Milk Company Cheese board the milder flavour of this cheese should be tasted at the beginning. This cheese is gorgeous simply with crusty bread or crackers but even more indulgent are the Minis baked in the oven! Want to enjoy with a glass of wine? A Riesling, Pinot Noir or crisp fruity dry white will go perfectly! This cheese sometimes grows a bloomy white mould, this is perfectly normal and is actually a good sign the cheese is maturing well, just wipe it off with a damp cloth. Unfortunelty as this is a soft cheese it is not safe to eat when pregnant. Made with vegetarian rennet it is suitable for vegetarians!

Organic Irish Rind Washed Brewers Gold

One of our top sellers for cheese lovers, winner of a Great Taste Award and Silver at the World Cheese Awards, Brewer’s Gold is a semi soft rind washed cheese which is made using Organic cow’s milk and hand washing the rind in Irish Craft Beer. Rubbing it with beer promotes the growth of a bacterium, this breaks down the texture of the cheese, turning it soft and pliable rather than firm. The rind can be sticky the taste is rich, nutty, creamy and sweet. The cheese as a result is rich and creamy, with subtle hoppy flavours, and a bright amber rind. But beware this also makes it stinky - in a good way, cheese lovers can’t get enough! This cheese sometimes grows a green mould sometimes a white bloomy mould, this is perfectly normal and is actually a good sign the cheese is maturing well, just wipe it off with a damp cloth. Brewers Gold is great for cooking also. We love it in recipes like a ‘Tartiflette’, made from bacon lardons, onions, garlic, potatoes, rosemary, Brewers Gold, Cream and Pepper. Irish Organic Cream Cheese

Our rich velvety cream cheese comes with two different toppings one with sweet roasted red pepper and the other with a beautifully fresh basil pesto. This is perfect shared with family and friends as a dipping snack with bread sticks or slathered on crusty bread – even used creatively in recipes or simply as a stir in sauce for pastas. The Cream Cheese with Pesto has won a Bronze at Mondial du Fromage and both have won Great Taste Awards. Available in 160g pots.

Fetagh

This lovely cows milk salad cheese is similar to the Mexican Anejo cheese which is creamy and salty and delicious diced served with tagines and salads. This gained a silver at the World Cheese Awards in 2014. It is available in 1kg or 150g.
